White Sauce Pasta Recipe | Light Béchamel with Sunflower Oil

A white sauce lives or dies on its fat — a neutral, cold-pressed sunflower oil keeps the béchamel clean and light.
Ingredients: 2 cups penne; 2 tbsp cold-pressed sunflower oil; 2 tbsp flour; 1½ cups milk; 2 garlic cloves; mixed herbs; pepper; salt; grated cheese; sweetcorn or broccoli (optional).
1. Boil the pasta in salted water until al dente; drain.
2. Warm the sunflower oil on low, sauté the garlic, then stir in the flour and cook for a minute without browning.
3. Add the milk gradually, whisking to a smooth, thick sauce.
4. Season with herbs, pepper and salt; toss in the pasta and vegetables, and finish with cheese.
