Rustic Mutton Curry Recipe | Slow-Cooked in Mustard Oil

A slow, rustic mutton curry — the kind where mustard oil carries the whole dish.
Ingredients: 750 g mutton; 3 tbsp cold-pressed mustard oil; 2 onions, sliced; ginger-garlic paste; 2 tomatoes; turmeric, red chilli and coriander powder; garam masala; salt; coriander to finish.
1. Marinate the mutton with turmeric, salt and a spoon of mustard oil for 30 minutes.
2. Heat the remaining mustard oil until it just smokes; brown the onions well.
3. Add the ginger-garlic paste, then the tomatoes and ground spices; cook until the oil separates.
4. Add the mutton, sear on high for 5 minutes, then add hot water and simmer covered until tender — about 45–60 minutes.
5. Rest ten minutes, finish with garam masala and coriander. Serve with rice.
