Kanda Poha Recipe | Maharashtrian Flattened Rice in Groundnut Oil

Kanda poha is the fifteen-minute breakfast Maharashtra runs on — soft flattened rice, sweet onions and roasted peanuts.
Ingredients: 2 cups thick poha, rinsed and drained; 2 tbsp cold-pressed groundnut oil; 1 tsp mustard seeds; 1 onion, chopped; 1–2 green chillies; curry leaves; ¼ tsp turmeric; salt; a pinch of sugar; lemon; roasted peanuts and coriander to finish.
1. Heat the groundnut oil, splutter the mustard seeds, then add curry leaves, chillies and onion; sauté until soft.
2. Add the turmeric, then the drained poha, salt and a pinch of sugar.
3. Toss gently on low heat until warmed through.
4. Finish with lemon juice, roasted peanuts and coriander.
