Groundnut Oil: The Complete Guide to Cooking & Uses

Groundnut oil is the steady workhorse of Indian kitchens — mild, gently nutty, and naturally at home in high heat.
What it is: oil pressed from groundnuts (peanuts). Ours is wood-pressed below 45°C in small batches, then settled and filtered without any chemical treatment.
Its naturally high smoke point makes it the traditional choice for deep frying — pooris, pakoras, vadas — and for the festive cooking of Gujarat and Maharashtra.
Flavour: gently nutty rather than peanutty. It adds quiet depth without taking over the dish.
Best uses: deep frying, stir-fries, South Indian tempering, undhiyu, sabudana khichdi and poha.
