Crispy Dosa Recipe | Golden Dosas with Groundnut Oil

A golden, shattering-crisp dosa is a pan-and-oil story as much as a batter story.
Ingredients: 3 cups fermented dosa batter; cold-pressed groundnut oil for the tawa; salt.
1. Heat a cast-iron tawa until a drop of water sizzles; wipe with a lightly oiled cloth.
2. Pour a ladleful of batter in the centre and spiral outward, thin.
3. Drizzle groundnut oil around the edges and over the centre — this is what makes it golden and crisp.
4. Cook until the edges lift and the base is deep golden. Fold and serve with chutney and sambar.
