Batata Bhaji Recipe | Shallow-Fried Potato Fritters in Groundnut Oil

Crisp besan outside, soft spiced potato inside — batata bhaji is the monsoon snack that demands a steady frying oil.
Ingredients: 3 boiled potatoes, mashed; ginger-garlic-green chilli paste; curry leaves; turmeric; salt; 1 cup gram flour (besan) for the batter; cold-pressed groundnut oil for frying.
1. Mix the mashed potato with the paste, curry leaves, turmeric and salt; roll into balls.
2. Make a smooth besan batter with a pinch of turmeric and salt.
3. Heat the groundnut oil to medium-high — a drop of batter should rise steadily, not brown instantly.
4. Dip each ball in the batter and fry until golden.
5. Drain on paper. Serve hot with chutney and pav.
